What to Eat?

Now before you go imagining a crazy clam and cocoa desert, a Mexican chocolate clam is native bivalve (clams with two shells of equal size connected by muscles) that gets its name from its brown-colored shell. While you can eat the clam fresh in ceviche, many prefer to serve them roasted and stuffed often with chiles, onion and spices. You may even see locals preparing this meal on the beach, just after harvesting the clams!
There are also many different delicious fish species native to the Baja Peninsula, but marlin is, without question, the most prized fish in any monger-shop or restaurant. Marlin filets are often firmer than other species, with a very subtle yet mouth-watering unique flavor. While you can serve marlin baked, broiled, grilled and other ways, the classic Cabo preparation is smoked marlin tacos. Smoking is a cooking technique that dates back to the region’s earliest ancestors. This technique adds a depth of char flavor and provides an elevated delicacy to the texture. Once smoked, the marlin is then added to a corn tortilla and often paired with cheese, fresh vegetables and lime juice for a delicious crisp bite.
